BBQ Chicken Pizza

This is one I sort of made up so I apologize there are no concrete measurements.

Chicken (about 1 lb)
BBQ sauce (1 bottle)
Pre-made pizza crust (I use Mama Mary's gourmet pizza crust, but any would work)
Mozzarella and cheddar cheese (about 90% mozzarella and 10% cheddar)

Cook chicken and BBQ sauce in crock pot for about 3 hours
Shred chicken while still in crock pot
Top pizza with shredded BBQ chicken and lots of cheese
Bake according to pizza crust package directions

***you can also add diced pineapple, cilantro, & tiny pieces of purple onions for a delicious variation

Whole Wheat What?

Banana-Chocolate Chip-Walnut-Whole Wheat MUFFINS

I feel full after saying their name- super easy and pretty darn good-

Dry:
1 3/4 c. finely milled WW flour
2 tsp. baking powder
1 tsp baking soda
3/4 tsp salt

Wet:
4 ripe bananas
1/3 c. sugar
1/3 c. vegetable oil
1/3 c. water

"Extras":
1+ c. chocolate chips
1 c. coarsely chopped walnuts

Instructions:
1. Preheat oven to 375. Spray muffin tin well with Pam.
2. Stir dry ingredients together in a bowl. Stir in extras. (This will help evenly distribute the extras through your batter.)
3. Mix wet ingredients in mixer until smooth and creamy.
4. Mix dry ingredients in to wet until just blended. (Do not over mix-muffins will be a little more tough if you do.)
5. Scoop batter into muffin tins. (Cups should be full.)
6. Bake 18-20 minutes. Muffins should be light golden brown when done.
7. When finished baking, place on a wire rack to cool right away. This will prevent them from getting soggy bottoms :).

**These are really good! They are even good without the nuts so babies and Luke can have them. Ken has taken one pretty much every morning for breakfast since I started making them. SUCCESS!
***Store bought Whole Wheat flour works great if you don't want to break out the grinder or if you don't have easy access to un-milled wheat. It's just easy to practice with. ENJOY.

Ham & Potatoes

Honey Baked Ham
Twice Baked Potatoes
Steamed Broccoli

We had the missionaries and some friends over for dinner last night & had the most delicious meal. It's nothing novel, but maybe it will spark some ideas for you guys. I bought a honey baked ham at Costco. I was amazed that the ham was only $2.25/lb, that's less than our ground beef! The ham cost us about $20, which is the same as a large pizza, but feeds way more people. I also made twice baked potatoes & steamed broccoli. We had jello with blueberry & whip cream for dessert. It was super yummy! For about $25 I fed six hungry adults, post-fast Sunday and we still had TONS of left-overs! Anyway, add it to your idea book to mix up the mundane.

Also, you could cook a couple extra potatoes to cut into pieces for Mom's potato, ham & pea soup. It would be a great way to use the left-over ham without feeling like it's the same meal.
